In these hot summer months it’s nice to have a refreshing summer drink. With all the choices for drinks out there it can be hard to know which will be the perfect one for you. I’m not going to claim I know anyone’s favorite drinks but I will be sharing some of my go to drinks for summer. When it comes to making any drink and finding a recipe I look for 2 things:
1. It has no more than 4 ingredients and
2. It’s quick and easy to make (I’ll leave all that mint smashing to the professionals)
So today I’m mixing up my two summer classics, the Pina Colada and a sexy little drink called a Mrs. Flamingo.
First up is that timeless pineapple and coconut combination, the Pina Colada. While I’m all for the premixed stuff you can get at the store it’s always too sweet for me. What I love about this recipe is that it’s only 3 ingredients (unless you count ice). All you need is some rum, cream of coconut, and some pineapple juice. Super simple. Because I love coconut so much I use coconut rum (so it’s extra coconut-y, like myself!) instead of plain rum. Now you can make this shaken, stirred, or even blended if you want to throw some pineapple chunks in there, but personally I like to shake things up (give those arms a workout you know?) I also might be biased because I have the perfect pineapple cocktail shaker to make a pina colada in. If you want an exact recipe I’ve included one but like all my drinks, I just make them to taste. Once you’ve shaken, stored or blended them all together go ahead and pour into a glass over ice and you’ve got yourself cocktail number 1!
Mrs. Flamingo is a perfect combination of sweet and crisp. There are a few different ways to make this one all based on your personal preference. It only calls for 2 ingredients, Coconut Rum and Pink Lemonade. I only made one change to this recipe and that was switching the pink lemonade for raspberry lemonade (I think it just adds a little more flair and flavor!) Again, I’ve posted the exact recipe but I just wing it when measuring. Once all your ingredients are added go ahead and mix them together (yes this one I stir, I don’t shake) and pour.
